Description

Grape: 100% produced with Salamino di Santa Croce grapes from estate vineyards

Soil: clayish Planting density: 3000 plants/ha

Fruit tree forms: unilateral guyot with 13-14 gems

Colour: intense ruby red.

Aroma: delicate and refined, with flower and wild berries scents.

Taste: wide and complex, marked by an outstanding freshness and a pleasant and full-flavored foam.

Food pairings: thanks to the typical freshness, it is a versatile wine, ideal with the typical emilian cuisine (gnocco fritto, tigelle and cold meats).

Serving temperature: 8-10 C°

Mechanical harvest in the coldest hours of the day

Further cooling of the grapes

Short maceration in the press

Soft pressing

Fermentation under low temperatures in a stainless steel tank

Prolonged cold refinement in steel

Addition of must and secondary fermentation in bottle

Long refinement under controlled temperature and humidity
